Since we've been quarantined, I've been cooking A LOT! Cooking has always been a passion of mine. One of my favorite things to do is see what we have in the kitchen, and then try to make something delicious from all the random ingredients I have. So, I figured I would share one of my favorite creations that I've made,so far. (This is actually one of the first things I made in this quarantine.)
Pad See Ew Noodle Soup
(Kinda similar to chicken noodle soup.)
Ingredients
avocado oil
garlic (2 or 3 cloves)
1 onion
1 carrot
2 stocks of celery 2 bags of frozen chicken bone broth
1 pad see ew noodles
bay leaf
two springs of thyme
salt
pepper
First, chop the onion, carrots, and celery. Put them in a pot at medium heat with the avocado oil. Let them cook until they start to get soft, then add minced garlic for about 1 or 2 minutes. *You don't want the garlic to burn. Add in the bone broth and about 2 cups of water. add in the bay leaf, thyme,and salt and pepper to taste. Bting to a boil and then let simmer for about an hour. Cook the noodles according to the package directions and add them to the broth. Bada bing,bada boom! Easy noodle soup! You can also add chicken, if you want meat.
